Michoacán has been often called the "Soul of Mexico". Its food is Mexico's soul food as few other places in the country can claim such a profound and long-lasting indigenous influence on their regional cuisine. Peter and Teresa Valencia bring the rich flavors of the Michoacán state to down east Maine. Peter's mother began making these flavorful foods in the 1950s. They use locally grown produce in their dishes when ever possible. Their spices and specialty items are imported from Mexico.
